The Bowl: A bulging, colourful bowl of vegetables - the vitamin kick for cold days!

The Bowl (in German: Schüssel) is well known as a new supertrend. But what exactly is a bowl? I googled that and figured it out: The bowl works like a kit - all the components are arranged in small spaces and assembled as if in a Japanese lunchbox. Almost a mini-salad bar with everything your heart desires. Since I've always been passionate about sumptuous buffets and always wanted to try everything, this "Bowl" concept is perfect for me. Anyway - I put a selection of currently available winter vegetables in this bowl, and let them marinate for a while in the dehydrator so that the vegetables get warmed and a little bit softened. Apart from the drying time for falafel and dried vegetables, the preparation of this bowl is really super fast and easy!

 
Winter bowl with pumpkin seed falafel, marinated dried vegetables and seed oil sesame dressing

For 2 persons

winter Bowl
10 falafel
125 g lettuce
2 handfuls of fine planed red cabbage
1 handful of sprouts
2 tbsp pumpkin seeds

dried vegetables
4 carrots, roughly grated
1/4 cauliflower, finely planed
2 tbsp olive oil
2 teaspoons cumin
salt and pepper

Seed oil and sesame sauce
60 g Tahini sesame paste
4 sprigs of parsley
2 tablespoons of lemon juice
70 ml of orange juice
2 tablespoons of seed oil
1 tbsp of agave syrup (alternatively honey)
1/2 toe garlic
1 pinch of cinnamon
1 pinch of chilli flakes
1/2 tsp salt

Pumpkin seed falafel
gives 25 pieces (rest freeze!)
150 g pumpkin seeds, ground
150 g of walnuts, ground
15 g fresh parsley
40 g raisins
2 tablespoons of pumpkin seed oil
2 tablespoons of lemon juice
1 tablespoon cumin, ground
1 tablespoon coriander, ground
1/2 teaspoon chilli flakes
1/2 clove garlic, crushed
1 tsp salt

For the falafel, chop the raisins, oil, lemon juice and parsley in the food processor - add 2-3 tablespoons of water if necessary. Mix the ground pumpkin seeds, walnuts, and remaining ingredients under this mash and make small balls from the mass. Allow to dry for 5-6 hours in a dehydrator or in an oven at 45-50 ° C.

For carrots, grate the carrots, marinate the carrots (cauliflower) and marinate them separately with olive oil, cumin, salt and pepper. Allow to dry in the Dörrofen or in the oven at about 50 ° C for about an hour, which heats the vegetables and makes them a bit softer.

For the sesame sauce mix all ingredients in the blender to a creamy sauce.

Arrange the vegetables for the winter bowl in a bowl in small groups, add the falafel and dehydrated vegetables and finish with the sesame dressing and a few pumpkin seeds. Good succeed!
